Hot Corn Dip



When I found this recipe on allrecipes.com, I looked at the ingredients and thought "This is too simple to be good."

I was wrong. It is simple - but it is VERY good!

Ingredients:
1 (15 ounce) can white corn, drained
1 (15 ounce) can yellow corn, drained
1 (10 ounce) can diced tomatoes with green chile peppers, drained
1 (8 ounce) package cream cheese, diced and softened
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
chopped fresh cilantro to taste (I omitted this)

I also added 1/4 tsp cayenne pepper and a dash of red pepper flakes. I probably could have done without the red pepper flakes for my taste - but Jordan likes spicy and he thought it was perfect.

Directions:

Preheat oven to 350 degrees F. In a medium bowl, mix white corn, yellow corn, diced tomatoes with green chile peppers(drained!), cream cheese, chili powder, garlic powder and cayenne pepper if you want it.



Bake in the preheated oven 30 minutes, or until hot bubbly

Serve warm with tortilla chips.
