Recipes from 2014 on will be gluten & dairy free. Earlier recipes could easily be adapted to gluten free cooking or baking.

Pork Rice Bowls
This was such a good recipe. My oldest daughter had 3 helpings! You can use whatever leftover meat you have on hand. We always tend to have left over pulled pork that we don't know what to do with so this was a great way to use some of that up. I used a homemade Mexican rice that I highly recommend, but you can easily use a boxed rice. Just read the ingredients if you have any foods you cannot have.
I made my own guacamole but used a store bought salsa. To make this dairy free you can use Tofutti sour cream and daiya shredded cheese.
Ingredients:
Mexican rice
shredded pork or meat of your choice
guacamole
sour cream
shredded cheese
salsa
chopped cilantro
Directions:
Cook rice according to box or recipe that you are following. Heat up the meat of your choice. Now you just assemble. In the bottom of a bowl start with your rice. Then add shredded meat, cheese & cilantro. Top with guacamole, sour cream and salsa. Serve with tortilla chips if desired.
