My Favorite Cake of All Time!



When I was growing up I would ask my mom to make this cake for me every year for my birthday. It's a very yummy chocolate cake and the icing is marshmellow like - yummy!! I made this for Saryn's 2nd birthday party but instead of making a cake I made it into cupcakes. They turned out great as cupcakes but they were very fluffy and I felt the cake to icing ratio was off. ;) I personally like this better as a cake and will probably not make cupcakes with this recipe next time.

Ingredients:
3 cups flour
2 tsp baking soda
1 tsp salt
2 cups sugar
1/3 cup cocoa
1 tsp vanilla
3/4 cup olive oil
2 tsp vinegar
2 cups water

Directions:

(Now my mom puts this into a 9x13 baking pan and mixes all the ingredients together in the pan) Put all ingredients into a large bowl and mix with a wire whisk. Pour into a 9x13 baking pan and bake at for 40 minutes or until a toothpick inserted in the center comes clean.

For the cupcakes I cooked for about 20-25 minutes.



Allow to cool and then frost with The Best Frosting Ever. Enjoy!!

I used to make this too; we called it Wacky Cake, and it was supposed to be frosted with Rocky Road frosting with miniature marshmallows in it- but I always used chocolate!
