Beef Stroganoff

I apologize for not posting anything recently. We've been in San Francisco for a week and I haven't been cooking! I have some catching up to do! :)

This recipe is from Jordan's maternal grandmother. It's one of those recipes that gets passed down to each new generation. Jordan grew up eating this stroganoff and I think his mom and aunt did too. It's the only stroganoff recipe I make and I know Jordan's cousins & brother makes this as well.

It's a very easy recipe to make and I usually try to keep the ingredients on hand. I halved the recipe this time because I only had 1 pound of the beef and it made just enough for our family - no leftovers though!

Ingredients:
2 lbs top of beef round, sliced very thinly
1 onion & a little bit of butter
1 pt sour cream
1 medium sized can of mushrooms
3 Tbsp soy sauce
6 Tbsp ketchup
Paprika, salt & pepper

Directions:
Cook onion in a small amount of butter until transparent. Add sliced meat and cook until brown. Add sour cream, soy sauce, ketchup, mushrooms & seasonings.

Cook until tender then if necessary thicken with flour (I’ve never had to do)

Serve with egg noodles or rice. We prefer egg noodles - and some sort of crusty garlic bread is a must!
