This is the most favorite banana bread recipe that we've found - you can add chocolate chips to it or make it into muffins. πHere’s what you’ll need:
π₯ Ingredients:
3 very ripe bananas, mashed
1 tsp baking soda
1/3 cup unsalted vegan butter, melted
3/4 cup granulated sugar
Pinch of salt
2 large eggs, beaten
1 tsp maple syrup
1 1/2 cups gluten-free all-purpose flour (King Arthur’s)
π Directions:
Preheat your oven to 350°F and spray a 4x8 loaf pan with cooking spray.
In a mixing bowl, mash the bananas until smooth.
Mix in the baking soda, followed by the melted butter.
Stir in the sugar, salt, eggs, and maple syrup.
Gradually add the gluten-free flour and mix until well combined.
Pour the batter into the prepared loaf pan.
Bake for 50 minutes to an hour, or until a toothpick comes out clean. Keep an eye on it, as oven times may vary.
Let it cool completely before slicing. I like to eat mine with a little softened vegan butter spread on my slice. ππ
