Becca made these one time as an appetizer when she had a
party. Some had cheese or some type of
dairy on them but she made some for us without the dairy. Instantly became one of our favorite
appetizers – and yours!
Ingredients:
2 sweet potatoes, cleaned, skins on
2 Tablespoons olive oil
2 ripe avocados
Lime juice
Salt and Pepper
4 slices of bacon
Instructions:
Preheat oven to 425 degrees. Line a baking sheet with aluminum foil. Brush 1/2
Tablespoon of olive oil on the aluminum foil.
Slice potatoes into 1/4 – 1/2 inch slices. You can use a mandolin but I just
eye balled it and used a sharp kitchen knife. Arrange slices on the prepared
baking sheet. Brush tops with remaining olive oil. I think I used another 3
Tablespoons of olive oil. Sprinkle with salt and pepper. Roast for 20-25
minutes, then flip. Roast an additional 8 minutes.
While your potatoes are roasting in the oven, make your guacamole. I just mash
up the avocado, add lime juice/salt to taste.
You can also buy from Whole Foods, their guac is the best for store
bought.
Fry up your bacon slices – I started cooking the bacon after I popped the
potatoes into the oven. Drain slices and chop once cooled.
Once your potatoes have finished roasting, put them on the plate you are
serving them with. Place a dollop of guacamole and sprinkle the chopped bacon
on top. Serve.
Recipes from 2014 on will be gluten & dairy free. Earlier recipes could easily be adapted to gluten free cooking or baking.

Gluten Free Banana Bread
This is the most favorite banana bread recipe that we've found - you can add chocolate chips to it or make it into muffins. 😋Here’s what you’ll need:
🥄 Ingredients:
3 very ripe bananas, mashed
1 tsp baking soda
1/3 cup unsalted vegan butter, melted
3/4 cup granulated sugar
Pinch of salt
2 large eggs, beaten
1 tsp maple syrup
1 1/2 cups gluten-free all-purpose flour (King Arthur’s)
🕒 Directions:
Preheat your oven to 350°F and spray a 4x8 loaf pan with cooking spray.
In a mixing bowl, mash the bananas until smooth.
Mix in the baking soda, followed by the melted butter.
Stir in the sugar, salt, eggs, and maple syrup.
Gradually add the gluten-free flour and mix until well combined.
Pour the batter into the prepared loaf pan.
Bake for 50 minutes to an hour, or until a toothpick comes out clean. Keep an eye on it, as oven times may vary.
Let it cool completely before slicing. I like to eat mine with a little softened vegan butter spread on my slice. 😋💛
